Hooray! I’m back! I’m *almost* functioning at 100%!

So, since I’m functioning again, that means I’ve got to start cooking again. I had 26 meals in the freezer for when I was out of commission, so no worries…we didn’t starve!
For the first dinner I prepared since surgery, I decided to try something simple. It worked, and it was so, so, tasty!!
…and I can do a tutorial on this, because cooking is crafting, too! :)
All you need for this recipe is:
- Tilapia fillets
- lemons
- butter
- salt and pepper
- foil, glass pan, oven, etc…
Preheat your oven to 350 degrees. Layer the pan with the lemons, the fillets, dabs of butter, salt and pepper.
Cover the pan with foil.
Bake for 25 minutes and you’ll have this:
See that lovely lemon butter at the bottom of the pan? Drizzle that over the fillets. Serve the fish with your veggies, rice, rolls, chocolate chip cookies, or whatever else you want.
I’ve got some picky eaters, and this simple dish was a crowd pleaser. We didn’t waste ANY of it!
Yep. This is a keeper!
